Got a chance to play with my @catalonia.oliva.pura a bit this week. I made a black pepper vinaigrette to go with harissa and salmon, saffron honey glazed carrots, lemon risotto and roasted leeks. It was great! I love rich olive oils. Thank you @catalonia.oliva.pura your stuff is the real deal!

Good Lord!!! Catalonia Extra Virgin Olive Oil is the best olive oil I have ever used. It’s silky, smooth and OH SO TASTY. How it´s Made

Our extra virgin olive oil is produced in the historic region of Siurana, located in the hills and valleys next to the Mediterranean “Golden Coast” of Catalonia, Spain. Made fresh and exclusively from Arbequina olives each harvest season, Catalonia Oliva Pura is among the world’s best extra virgin olive oils.

Olive Gathering

Straight from the tree, we discard flawed olives and pick (literally) only the finest, healthiest olives. We must admit, picking the perfect olive is our favorite part.

Cleaning

After removing leaves and stems, we deploy our olives to specialized air ventilators that eliminate dust, dirt and debris. The olives are finally bathed in purified water in order to achieve pristine, flawless batches.

Peeling and Grinding

Less than 24 hours after the olives have been picked and cleaned, we proceed with our grinding process in order to ensure the quality of the oil. This consists of peeling and crushing the olives in order to facilitate oil extraction. Peeling and grinding is done in a temperature controlled room in order to avoid oxidation and to maintain the olives natural aromatic compounds.

Oil Extraction

To extract the oil from the peeled and crushed olives; they are placed in an air-sealed high velocity spinning cylinder. Through this process, oil is extracted and separated by density.

Storage

Our storage facilities are no different from high end wine cellars.  We go above and beyond to keep our oil at the perfect temperature, at a low light, and kept and sealed in stainless steel tubing. Finally, our bottling process is done with great care and poured in dark, thick bottles that maintain the oil's integrity.
